The PhD works aims to address current issues in the food packaging industry: food waste and pollution due to the use of fossil based plastics. Thus, the main purpose of the thesis concerns the preparation and characterization of biopolymer active packaging for bread and its derivatives. Firstly, pectin-based films with different calcium salts as crosslinkers were produced and fully characterized. Then carboxymethyl cellulose was added to the formulation as a reinforcing agent. In addition, such films were prepared also with AgZ, i.e. embedded zeolites microparticles, that contain adsorbed Ag+ ions. The remarkable mechanical, gas and water vapor barrier properties and especially the antimold efficacy of such films led to a patent. Among these films, the most promising are those with PEC/CMC/Aol CaP and AgZ. Such formulations have been used as coating agents of paper, another promising material for bread packaging. In the final part of the PhD research, another biodegradable polymer, polycaprolactone (PCL), was employed for the development of packaging. In details montmorillonites, zeolites, rice husks, calcium propionate, and zinc oxide nanoparticles were added to PCL. Mechanical, surface, gas and water vapor barrier properties of the resulting films were evaluated.
Il lavoro di tesi si propone di far fronte alle attuali problematiche nel settore del food packaging: lo spreco di cibo e l’inquinamento dovuto all’uso di plastiche derivate da risorse fossili. Lo scopo principale della tesi riguarda quindi la preparazione e caratterizzazione di packaging attivo a base di biopolimeri per pane e derivati. In primo luogo sono stati realizzati e studiati film a base di pectina con diversi sali di calcio come crosslinker. Successivamente è stata addizionata alla formulazione carbossimetilcellulosa come agente di rinforzo. Inoltre, i film sono stati preparati anche disperdendovi AgZ, cioè zeoliti in forma di microparticelle, le quali a loro volta contengono (adsorbiti nei pori) ioni Ag+. Le notevoli proprietà meccaniche, di barriera ai gas e vapori di acqua e soprattutto l’efficacia antimicrobica (antimuffa) di tali film ha portato a un brevetto. Tra questi film i più promettenti sono quelli con PEC/CMC/Aol CaP e AgZ. Tali formulazioni sono state usate come coating agent di carta, altro promettente materiale per imballaggio di pane. Nella parte finale della ricerca è stato studiato anche un altro polimero biodegradabile, il policaprolattone (PCL), a cui sono stati aggiunti diversi materiali quali montmorilloniti, zeoliti, lolla di riso, propionato di calcio, nanoparticelle di ossido di zinco. Anche dei film basati su PCL sono state misurate le proprietà meccaniche, superficiali, e di barriera a gas e vapori di acqua
