A straightforward enzymatic synthesis of γ-glutamyl-S-alkyl and S-alkenyl cysteines based on a transpeptidation reaction catalyzed by a purified, home-made bacterial γ-glutamyl transpeptidase (GGT) from a GRAS organism (thus suited to food processing) has been developed.
