In a previous study on the antiradical activity of dietary vegetables, water soluble components present in Cichorium intybus produced in the Treviso area, acknowledged as of protected geographical origin, were found to contain both antioxidant components and accelerating lipid peroxidation components. The study continued on order to separate and characterize the compounds responsible for such activities. A first separation of water soluble components of the tested vegetable was based on different molecular weight: the raw juice was submitted to dialysis with different cut off. MW<3500Da and MW>300000Da fractions were particularly interesting for their activity in the chemical and in the biological systems. The GFC analysis of the first fraction showed the presence of more subfractions. The analysis HPLC of the subfraction with more antioxidant activity in the chemical system showed that it was formed by eight different components which are still under consideration. Preliminary studies on the higher MW fraction, which can completely inhibit the peroxidation of microsomal lipids, showed that it has a behaviour similar to vegetable melanoidins with regard to its solubility and reaction with acidic and basic media.
